There is a difference between a chemical and a physical reaction. This is why it is always important to know where your food comes from. You may think that you are allergic to eggs, fruits or vegetables, but you could be having an intolerance to the chemicals associated with the way things are grown and manufactured. Individuals may simply be responding to an antibiotic or hormone injection that was given to a chicken that lays the eggs used in their household, or having a reaction to a fertilizer or bug repellent on produce. You can even have a chemical reaction to the packaging your food is stored in.

After the birth of my daughter I developed a horrible intolerance to eggs. I had zero “allergic” response when tested. However, every time I ate eggs, farm fresh or store bought, they came right back up. Like, violently…..like, someone was reaching their hand down to my stomach and pulling the eggs out with my soul. This stumped both my doctor and myself for months. Until one day….. My doctor asked me how I prepared my eggs. I told him that I had this perfect little bowl that I cracked two eggs in, whisked them with a fork, then put them in the microwave for 45 seconds. They came out perfect everytime! He looked at me a little perplexed and said, “Stop microwaving your eggs.”

Apparently, the microwave changes the molecular structure of the egg, causing some sort of a freak reaction in my body. (Only me! LOL) The next morning I cooked my eggs on the stove and I’ve never had a reaction to eggs since. That was almost five years ago.

I know that some people with autoimmune diseases do not eat eggs for fear that they increase inflammation. I eat eggs daily and as long as they aren’t microwaved, I don’t have any issues with them. If you are on-the-fence about eggs or any specific food, keep a food journal. Log what you eat and how you feel not just physically, but emotionally as well. It’s not a bad idea to note how you prepared the food as well.
