Avocado and coconut are full of healthy fats. What better way to get your family to eat them than in pie?!?!
Chocolate Avocado Cream Pie (gluten free, dairy free)
Ingredients:
- Chocolate avocado pudding (below)
- CocoWhip
- Prepared Gluten Free Graham Cracker Crust
Directions:
- Combine pudding with half of the CocoWhip.
- Mix well and pour into crust in and even layer. Top with remaining CocoWhip. We like to add Enjoy Life Mini Chips as well.
Chocolate Avocado Pudding
Ingredients:
- 1 ripe avocado
- 2 TBSP of REAL maple syrup
- 1/4 cup of full fat canned coconut milk
- 8oz of Enjoy Life Chocolate mini chips (melted)
Directions:
- Melt chocolate in double boiler or microwave.
- Combine all ingredients in a food processor until smooth.
- You may chill before serving but isn’t necessary. If you are mixing with CocoWhip for cream pie, I do recommend chilling it.
